  • 8 corn or flour tortillas
  • 2 cups red sauce (homemade or store-bought)
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (optional for serving)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Sauté onion and garlic in a pan over medium heat until translucent.
  3. Add ground beef and cook until browned (7-10 minutes). Stir in cumin and chili powder.
  4. Warm tortillas in a skillet or microwave until pliable.
  5. Fill each tortilla with 2 tablespoons of beef mixture and some cheese; roll tightly.
  6. Place rolled enchiladas seam-side down in the baking dish. Pour red sauce over them and sprinkle with remaining cheese.
  7. Bake uncovered for 20-25 minutes until bubbly and heated through. Serve hot with sour cream if desired.
