Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (from about 2 lemons)
  • 2 tsp dried oregano
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Place chicken breasts in a resealable bag or bowl and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes (preferably up to an hour).
  2. Preheat Your Grill: Heat your grill to medium-high (400°F / 200°C).
  3. Grill Until Golden: Remove chicken from marinade and discard leftover marinade. Grill each breast for 6-7 minutes per side or until internal temperature reaches 165°F (75°C).
  4. Let It Rest: Transfer grilled chicken to a cutting board and let rest for 5 minutes before slicing.
  5. Serve with Style: Slice the chicken and serve with salad greens, pita bread, or roasted vegetables. Top with crumbled feta cheese if desired.
