  • 1 cup dried black beans (or 2 cans, rinsed)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. If using dried black beans, soak overnight and rinse. For canned beans, simply rinse under cold water.
  2. In a large pot over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes).
  3. Add minced garlic and cumin; stir for another minute until fragrant.
  4. Pour in the black beans and vegetable broth; bring to a boil then reduce heat to low. Simmer for about 30 minutes until thickened.
  5. Season with lime juice, salt, and pepper to taste.
  6. Stir in chopped cilantro just before serving.
