  • 34 lbs chuck roast
  • 4 large yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 46 garlic cloves, minced
  • 4 sprigs fresh thyme (or 2 tsp dried thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Preheat the oven to 325°F (160°C). In a Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast on all sides until golden brown.
  2. Remove the roast and add sliced onions to the pot. Cook until caramelized (about 15 minutes).
  3. Add minced garlic and thyme, cooking for another minute.
  4. Return the roast to the pot, adding beef broth until nearly covered. Place bay leaves on top.
  5. Cover and braise in the oven for about 3 hours or until fork-tender.
  6. Allow resting for 10 minutes before slicing. Serve with mashed potatoes or crusty bread.
