Ingredients

  • 1 cup dried chickpeas (soaked overnight) or 1 can (15 oz) chickpeas (drained)
  • 1 cup fresh parsley (packed)
  • 3 garlic cloves
  • 2 tsp ground cumin
  • 1/4 cup all-purpose flour
  • 4 pita breads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/4 cup tahini sauce
  • Oil for frying

Instructions

  1. If using dried chickpeas, soak them overnight. If using canned, drain and rinse.
  2. In a food processor, combine chickpeas, parsley, garlic, cumin, salt, and flour. Pulse until coarse.
  3. Form small balls or patties from the mixture using damp hands.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Fry falafels for about 3-4 minutes on each side until golden brown and crispy.
  6. Warm pita bread slightly; fill with lettuce, tomatoes, falafels, and drizzle with tahini sauce before rolling up.
