  • 8 fresh corn tortillas
  • 2 cups shredded rotisserie chicken
  • 1 lb tomatillos, husked and rinsed
  • 1 cup fresh cilantro, chopped
  • 1 cup queso fresco, crumbled
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Sour cream (optional)

Instructions

  1. Boil tomatillos until soft (about 10 minutes). Blend with cilantro, lime juice, garlic, and salt until smooth.
  2. In a pan over medium heat, sauté diced onions in olive oil until translucent (about 5 minutes).
  3. Preheat oven to 375°F (190°C). Fill each tortilla with shredded chicken and onion mixture; roll tightly.
  4. Place rolled enchiladas seam-side down in a baking dish. Pour the blended sauce over them and sprinkle with queso fresco.
  5. Bake for 20 minutes or until bubbly. Serve hot with sour cream and lime wedges.
