  • 3 lbs chuck roast
  • 4 dried guajillo chiles (seeds removed)
  • 6 garlic cloves
  • 2 tsp cumin powder
  • 4 cups low-sodium beef broth
  • 1/4 cup fresh lime juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Gather and prep all ingredients; chop garlic and limes.
  2. Toast guajillo chiles in a skillet over medium heat for 30 seconds until fragrant.
  3. Blend toasted chiles, garlic, cumin, oregano, lime juice, and beef broth until smooth.
  4. Sear the chuck roast in olive oil on both sides for about 4-5 minutes per side.
  5. Place the seared roast in a crockpot and pour the blended sauce over it; season with salt and pepper.
  6. Cook on low for 8 hours or high for 4 hours until meat is tender.
  7. Shred the meat right in the crockpot using two forks; serve with tortillas or rice topped with cilantro if desired.
