  • 1 lb lean ground turkey
  • 1 cup fresh cranberries, chopped
  • 1 cup plain breadcrumbs
  • 1 medium onion, finely chopped
  • 1 cup celery, diced
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh sage, chopped
  • 2 large eggs, beaten
  • ½ cup low-sodium chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, warm olive oil and sauté onions and celery until softened (about 5 minutes).
  3. Add ground turkey to the skillet; cook until browned (7-10 minutes), breaking it apart as it cooks.
  4. Stir in cranberries, breadcrumbs, thyme, sage, salt, and pepper; cook for an additional 3 minutes.
  5. Remove from heat; allow to cool slightly before mixing in beaten eggs and chicken broth.
  6. Form mixture into small balls (about 2 inches wide) and place on a lined baking sheet.
  7. Bake for 25-30 minutes until golden brown.
