  • 1 cup fresh orange juice (about 2 oranges)
  • Zest of 1 orange
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup fresh or frozen cranberries (if using dried, soak beforehand)
  • Optional: 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In one bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
