  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups all-purpose flour
  • 2 large eggs (room temperature)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. For the crust, mix softened butter and granulated sugar until creamy. Gradually add flour and baking powder to form a crumbly dough.
  3. Press two-thirds of the dough into the bottom of the prepared dish and bake for 10-12 minutes until lightly golden.
  4. In another bowl, combine cranberries, sugar, and vanilla extract; pour over the baked crust.
  5. Crumble remaining dough on top of the cranberry layer and bake for an additional 25-30 minutes until bubbly and golden brown.
  6. Allow cooling before slicing into squares and dust with powdered sugar before serving.
