  • 4 cups fresh corn kernels (about 6 ears)
  • 4 slices thick-cut bacon, diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 medium Yukon gold potatoes, diced (about 2 cups)
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot with the bacon drippings, sauté onions until translucent. Add garlic and cook until fragrant.
  3. Stir in diced potatoes and corn; cook for about 2–3 minutes.
  4. Pour in chicken broth, bring to a simmer, and cook for 15–20 minutes until potatoes are tender.
  5. Lower the heat and stir in heavy cream, thyme, salt, and pepper; let simmer for another 5 minutes.
  6. Serve hot, topped with crispy bacon bits or fresh herbs if desired.
