  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 4 oz cream cheese (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla, mixing well.
  3. In another bowl, whisk together flour, baking powder, and cinnamon. Gradually combine with wet ingredients until well mixed.
  4. For the filling, mix brown sugar and cinnamon in a small bowl. Roll out the dough into a rectangle on parchment paper; sprinkle the filling over it.
  5. Roll the dough tightly into a log shape and slice into one-inch pieces.
  6. Place slices on the baking sheet with space between them and bake for 10-12 minutes until lightly golden.
  7. To make the frosting, whip together softened cream cheese, powdered sugar, and milk until smooth. Spread over warm cookies.
