  • 1 can (14.5 oz) diced tomatoes with green chilies

  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • ½ cup chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil and sauté chopped onions and bell peppers until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in ground beef or turkey and cook until browned. Add canned tomatoes, black beans, and chili powder; stir well and simmer for about 10 minutes.
  4. In a separate bowl, prepare Jiffy corn muffin mix according to package instructions.
  5. In a greased baking dish, pour the chili mixture evenly across the bottom. Spread cornbread batter over the top.
  6. Bake in the preheated oven for 25-30 minutes or until golden brown on top.
