  • 2 lbs chuck roast, cut into chunks
  • 4 dried ancho chiles, stems and seeds removed
  • 4 cloves garlic, minced
  • 2 tsp cumin powder
  • 2 cups low-sodium beef broth
  • 1 large yellow onion, chopped
  • 8 oz tomato sauce (unsweetened)
  • Salt and pepper to taste

Instructions

  1. Toast ancho chiles in a dry skillet until fragrant; set aside.
  2. Sauté onions in olive oil over medium heat until translucent; add garlic and cook until golden.
  3. Season chuck roast with salt and pepper; sear in the pot until browned on all sides.
  4. Add beef broth and tomato sauce; stir to combine.
  5. Blend toasted chiles with some cooking liquid until smooth; return to pot.
  6. Simmer on low heat for 2-3 hours until meat is tender enough to shred.
