  • 4 boneless, skinless chicken breasts
  • 2 celery stalks, chopped
  • 1 cup red grapes, halved
  • 1 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Bake chicken breasts for 25-30 minutes until cooked through. Let cool before shredding.
  3. Chop celery and halve grapes while chicken cools.
  4. In a large bowl, mix shredded chicken with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until well combined.
  5. Gently fold in chopped celery and grapes. If using nuts, add them now.
  6. Chill in the refrigerator for at least 30 minutes. Serve on bread or lettuce wraps.
