  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 cloves fresh garlic, minced
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 cup bell peppers, chopped (mix of colors)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (optional)

Instructions

  1. Heat 2 tsp of olive oil in a skillet over medium heat. Add diced chicken seasoned with cumin and chili powder; cook until fully cooked, about 6-8 minutes.
  2. Add minced garlic and chopped bell peppers; sauté for another 3-4 minutes until peppers are tender.
  3. Spread the chicken mixture on half of each tortilla, sprinkle with shredded cheese, and fold over.
  4. Wipe the skillet clean and add more olive oil if needed. Cook each quesadilla for about 3-4 minutes per side until golden brown and cheese has melted.
  5. Remove from heat, let rest for a minute, then slice into wedges. Serve with sour cream or salsa.
