  • 1 cup fresh carrots, diced
  • 1 cup frozen peas
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream or whole milk
  • 2 sheets puff pastry
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Dice chicken into bite-sized pieces. In a skillet over medium heat, melt butter; add chicken and cook until golden brown (6-8 minutes).
  3. Add onion, garlic, carrots, and celery; sauté for about 5 minutes until softened.
  4. Pour in chicken broth; bring to simmer. Stir in cream gradually until thickened (around 5 minutes). Adjust consistency with more broth if needed.
  5. Mix in thyme, parsley, salt, and pepper. Allow flavors to meld for another minute.
  6. In a baking dish, roll out one puff pastry sheet as the base; fill with chicken mixture and cover with another pastry sheet. Cut slits for steam.
  7. Bake for 25-30 minutes until crust is golden brown.
