  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 9 no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-4 minutes).
  3. Add diced chicken to the skillet and cook until no longer pink (6-8 minutes), seasoning with salt, pepper, and Italian seasoning.
  4. Stir in spinach until wilted; add marinara sauce and simmer for 5 minutes.
  5. In a baking dish, layer with a thin layer of sauce, lasagna noodles, ricotta cheese dollops, chicken mixture, mozzarella cheese; repeat until all ingredients are used.
  6. Cover with foil and bake for 25 minutes; remove foil and bake another 15 minutes until golden brown.
