  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 4 large flour tortillas
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your grill or stovetop pan to medium-high heat. Season the chicken breasts with salt and black pepper, then grill for about 6-7 minutes per side until golden brown and cooked through.
  2. Allow the chicken to rest for a few minutes before slicing it into strips.
  3. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, and grated Parmesan cheese. Drizzle with Caesar dressing and toss gently until well-coated.
  4. Lay a generous handful of the salad mixture in the center of each tortilla. Top with sliced chicken and add extra dressing if desired.
  5. Fold in the sides of the tortilla and roll tightly from bottom to top. Slice diagonally for serving.
