  • 1 lb boneless chicken thighs
  • 2 cups long-grain basmati rice
  • 2 medium onions, thinly sliced
  • 2 tbsp fresh ginger, minced
  • 2 tbsp fresh garlic, minced
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 2 tsp garam masala
  • 1 cup full-fat yogurt
  • A pinch of saffron (optional)
  • 1/4 cup cilantro and mint leaves, chopped
  • 3 cups water
  • Salt to taste

Instructions

  1. Marinate the chicken with yogurt, ginger-garlic paste, cumin, coriander powder, salt, and garam masala in a large bowl for at least 30 minutes.
  2. Rinse basmati rice under cold water until clear; soak for 30 minutes.
  3. In a pot, heat oil or ghee over medium heat and sauté sliced onions until golden brown.
  4. Add marinated chicken to the pot; cook until browned (about 10 minutes).
  5. Layer soaked rice over the chicken without stirring; sprinkle saffron (if using), remaining spices, cilantro, mint leaves, and water on top.
  6. Cover tightly and reduce heat to low; simmer undisturbed for 25-30 minutes until rice is fluffy.
