  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 2 cups mixed vegetables (frozen peas and carrots)
  • 1 tsp onion powder
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then place them at the bottom of the baking dish.
  3. In a bowl, mix rice, cream of chicken soup, chicken broth, mixed vegetables, and onion powder until combined.
  4. Pour the mixture over the chicken breasts in the baking dish; spread evenly.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil, sprinkle cheese and breadcrumbs on top, then return to oven for an additional 10-15 minutes until golden brown.
  7. Let cool slightly before serving.
