  • 12 jumbo pasta shells
  • 3 cups cooked, shredded boneless, skinless chicken breasts
  • 2 cups Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook the jumbo pasta shells until al dente; drain and set aside.
  2. In a skillet over medium heat, sauté diced chicken breasts in olive oil seasoned with salt and pepper until cooked through (about 6-8 minutes).
  3. In a large bowl, combine cooked chicken with Alfredo sauce.
  4. Stuff each shell with the chicken mixture and arrange in a greased baking dish.
  5. Pour any remaining Alfredo sauce on top and sprinkle with mozzarella and Parmesan cheeses.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  7. Garnish with fresh parsley before serving.
