  • 2 cups cherry tomatoes, halved
  • 8 oz pasta (spaghetti or penne)
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, torn
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Boil a large pot of salted water. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, warm olive oil. Add minced garlic and sauté until fragrant.
  3. Add halved cherry tomatoes to the skillet; season with salt and pepper. Cook for about 5-7 minutes until softened.
  4. Mix drained pasta into the skillet with tomatoes, adding reserved pasta water as needed for creaminess.
  5. Remove from heat and fold in torn basil leaves and grated Parmesan until well combined.
  6. Serve hot, garnished with extra basil or cheese, and red pepper flakes if desired.
