  • 8 oz penne pasta
  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 2 green onions, finely chopped

Instructions

  1. Boil salted water in a large pot. Add penne and cook until al dente according to package instructions. Drain and set aside.
  2. In a skillet over medium heat, cook ground beef or turkey for about 5-7 minutes until browned.
  3. Stir in taco seasoning and diced tomatoes into the meat mixture. Simmer for 3-5 minutes.
  4. Mix the drained pasta with the meat mixture until well coated.
  5. Lower heat and sprinkle shredded cheddar cheese over the pasta. Cover briefly until melted.
