  • 4 nori sheets
  • 1 cup imitation crab meat (or real)
  • 1 ripe avocado, sliced
  • 1 cucumber, sliced
  • 2 tablespoons low-sodium soy sauce (for serving)
  • Wasabi paste (to taste, for serving)
  • Pickled ginger (for serving)

Instructions

  1. Rinse the sushi rice under cold water until clear, then cook according to package instructions. Let cool slightly.
  2. Slice the avocado and cucumber into thin strips. If using imitation crab, break it into small pieces.
  3. Place a nori sheet shiny side down on a bamboo mat. Wet your hands to prevent sticking.
  4. Spread about 1 cup of cooled rice over two-thirds of the nori sheet, pressing gently.
  5. Lay strips of avocado, cucumber, and crab along the center of the rice.
  6. Roll the nori tightly away from you using the bamboo mat; seal with a bit of water if needed.
  7. Use a sharp knife dipped in water to cut the roll into bite-sized pieces.
