  • 2 cups butternut squash (cubed)
  • 1 cup ravioli dough (homemade or store-bought)
  • ½ cup Parmesan cheese (freshly grated)
  • 6 fresh sage leaves
  • 2 tbsp unsalted butter
  • ¼ tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25 minutes until tender.
  2. In a food processor, blend roasted squash with Parmesan cheese, salt, pepper, and nutmeg until smooth.
  3. Roll out ravioli dough to about 1/16 inch thick. Cut into squares or circles.
  4. Place a dollop of filling on each piece of dough, moisten edges with water, and seal tightly.
  5. Boil salted water in a large pot. Cook ravioli until they float (about 3-4 minutes).
  6. In a skillet over medium heat, melt butter and sauté sage leaves until crispy (about 3 minutes). Toss cooked ravioli in the sauce before serving.
