  • 4 large bell peppers (any color)
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions (finely chopped)
  • 1 tsp garlic powder
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a bowl, mix together the shredded chicken, buffalo sauce, cream cheese, garlic powder, and paprika until well combined.
  4. Stuff each pepper generously with the chicken mixture and top with shredded cheddar and mozzarella.
  5. Place the stuffed peppers upright in a baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10–15 minutes until golden brown.
  6. Garnish with chopped green onions before serving.
