  • 2 lbs bone-in chicken thighs
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 cup bell peppers, diced (mixed colors)
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 Scotch bonnet pepper (optional)
  • 3 tbsp low-sodium soy sauce
  • 2 cups chicken broth
  • 1 tsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken thighs with salt, pepper, soy sauce, minced garlic, and thyme for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Sear the marinated chicken until golden brown on both sides (about 5-7 minutes per side). Remove from the pot.
  3. In the same pot, sauté chopped onions and bell peppers until onions are translucent (about 3-4 minutes).
  4. Return the chicken to the pot and add chicken broth and Scotch bonnet pepper. Bring to a simmer.
  5. Cover partially and simmer on low heat for about 45 minutes or until the chicken is tender.
