  • 1/2 cup whole milk
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 package (3.4 oz) vanilla pudding mix
  • 1/2 cup heavy cream (for ganache)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, and sugar.
  3. In another bowl, beat the butter until fluffy, then gradually add sugar until light and airy.
  4. Add eggs one at a time, alternating with milk; beat until smooth.
  5. Fill each cupcake liner two-thirds full and bake for 18-20 minutes or until they spring back when touched.
  6. While cooling, prepare the filling by whisking the pudding mix with milk and chilling until set.
  7. For the ganache, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth.
  8. Once cooled, cut holes in the tops of cupcakes to fill with pudding and drizzle ganache over.
