  • 3 lbs chuck roast
  • 2 medium yellow onions, sliced
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles, soaked
  • 2 tsp ground cumin
  • 2 tsp Mexican oregano
  • 1 cup beef broth
  • Juice of 2 limes
  • Flour or corn tortillas for serving

Instructions

  1. Chop the chuck roast into chunks and slice the onions thinly.
  2. Soak the dried guajillo chiles in boiling water for about 15 minutes until softened.
  3. In a skillet over medium-high heat, sear the chuck roast chunks in oil until browned on all sides.
  4. Add sliced onions and minced garlic to the skillet; sauté until onions are translucent (about 5 minutes).
  5. Blend soaked chiles (discarding stems), cumin, oregano, lime juice, and beef broth until smooth.
  6. Pour the blended sauce over the seared meat in a slow cooker or Dutch oven. Cover and cook on low for 8 hours until fork-tender.
  7. Shred the beef with two forks and serve hot in warm tortillas topped with fresh cilantro and diced onions.
