  • 1 cup unsalted butter (cold, cubed)
  • ¾ cup granulated sugar
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 6 cups apples (mixed varieties: Granny Smith and Honeycrisp, peeled and sliced)
  • 1 tbsp lemon juice
  • ½ tsp salt
  • Ice water (as needed)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. For the crust, mix flour and salt in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough forms.
  3. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  4. For the filling, combine sliced apples with sugar, cinnamon, nutmeg, lemon juice, and salt in a bowl.
  5. Roll out half the chilled dough to fit a pie dish. Press into the dish without stretching.
  6. Pour the apple mixture into the crust-lined pie dish.
  7. Roll out the remaining dough for the top crust, crimping edges securely after placing it over the filling.
  8. Cut slits in the top crust for steam to escape and bake for 45-50 minutes until golden brown.
