Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix sugar and oil (or melted butter) until smooth. Add eggs one at a time, followed by apple cider.
  4. Fold in chopped apples gently into the wet mixture.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Pour batter into prepared pan and bake for 30-35 minutes until golden brown and a toothpick comes out clean.
