  • 1 cup cornstarch (plus extra for dusting)

  • 1 tablespoon rosewater or lemon juice
  • ½ cup pistachios or walnuts (optional)

Instructions

  1. In a medium saucepan over medium heat, combine granulated sugar and water until dissolved. Allow to boil gently.
  2. Slowly sprinkle gelatin over the mixture while whisking until fully dissolved. Stir in rosewater or lemon juice.
  3. Cook on low heat until thickened, about 10-15 minutes; it should coat the back of a spoon.
  4. Line an 8×8 inch pan with parchment paper and pour in the mixture evenly. Smooth the top and let cool at room temperature for several hours or overnight.
  5. Once set, cut into small cubes with a sharp knife and dust generously with cornstarch to prevent sticking.
  6. Serve and enjoy with tea or as a sweet snack.
