  • 2 pounds ripe tomatoes (fresh or canned)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup apple cider vinegar (preferably organic)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 cup water (adjust for consistency)
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Wash and quarter the tomatoes. Dice the onion and mince the garlic.
  2. In a large saucepan over medium heat, sauté the onions in olive oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in chopped tomatoes, salt, pepper, brown sugar, apple cider vinegar, and water. Simmer for 30 minutes, stirring occasionally until the tomatoes break down.
  4. Remove from heat and let cool slightly before blending until smooth using an immersion blender or regular blender.
  5. Taste and adjust seasoning with more brown sugar or vinegar if needed. Add cayenne pepper for heat if desired.
  6. Transfer cooled ketchup to sterilized jars/bottles and store in the fridge for up to three weeks.
