Rice pilaf is a comforting and flavorful dish that brings warmth to any table.   • 1 cup long-grain basmati or jasmine rice
  • 2 cups low-sodium vegetable stock
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 1 medium carrot, diced (or substitute with peas or bell peppers)
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 2 tbsp olive oil or butter
  • Fresh parsley or cilantro for garnish

Instructions

  1. Chop the onion, mince the garlic, and dice the carrot.
  2. In a large pot over medium heat, heat olive oil or butter. Add onions and cook until translucent (about 5 minutes).
  3. Stir in minced garlic for another minute. Then, add rice and stir to coat with oil.
  4. Carefully add vegetable stock along with cumin and turmeric. Bring to a boil.
  5. Mix in diced carrots (or other veggies). Reduce heat to low, cover tightly, and simmer for 15-20 minutes until liquid is absorbed.
  6. Remove from heat but keep covered for another 5 minutes. Fluff rice with a fork before serving, garnished with fresh herbs.
