  • 3 lbs chuck roast
  • 1 packet ranch dressing mix (1 oz)
  • 1 cup pepperoncini peppers (with juice)
  • 1 cup low-sodium beef broth
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 packet onion soup mix (1 oz)

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and pepper.
  2. In a large pan over medium-high heat, sear the roast for 4-5 minutes on each side until browned.
  3. In the slow cooker, combine ranch dressing mix, garlic powder, onion soup mix, beef broth, and pepperoncini peppers. Stir gently.
  4. Place the seared roast on top of the mixture and add pats of butter on top.
  5. Cover and cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
  6. Shred the meat in the slow cooker using two forks and mix it back into the juices before serving.
