  • 2 stalks celery, diced
  • 1 can (14.5 oz) chopped tomatoes in juice
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried basil (or 2 tbsp fresh)
  • 1 tsp dried oregano (or 2 tbsp fresh)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Prep your ingredients by dicing the carrots, celery, and mincing the garlic.
