  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 4 medium carrots, chopped
  • 3 medium Yukon Gold or Russet potatoes, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme leaves (or 4 sprigs)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef on all sides for about 5 minutes. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (3-4 minutes).
  3. Add carrots and potatoes; stir to combine and cook for another 5 minutes.
  4. Return the browned beef to the pot. Pour in the beef broth and add thyme and bay leaves.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 – 2 hours until meat is fork-tender.
  6. Season with salt and pepper before serving hot with crusty bread.
