  • 1 lb lean ground beef
  • 2 cups low-sodium beef broth
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 cup peas (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and cook the whole wheat pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large skillet over medium heat, drizzle olive oil and sauté chopped onions and bell peppers for about 3–4 minutes until softened.
  3. Push the vegetables to one side of the skillet, add lean ground beef, and cook until browned (about 5–7 minutes). Break it apart with a spatula as it cooks.
  4. Pour in low-sodium beef broth along with garlic powder, paprika, Italian seasoning, salt, and pepper. Stir well and simmer for about 5 minutes.
  5. Gently fold in cooked pasta and sprinkle shredded cheddar cheese on top. Stir until everything is heated through and cheese has melted (approximately 2 minutes).
