  • 1 lb ground beef (chuck and sirloin blend)
  • 1/2 cup panko breadcrumbs
  • 2 green onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp Korean gochujang sauce
  • 1 tbsp sesame oil
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, panko breadcrumbs, green onions, garlic, gochujang, sesame oil, and salt. Mix until well incorporated.
  3. Form mixture into 1-inch meatballs and place on a lined baking sheet.
  4. Bake for 20 minutes or until golden brown and reach an internal temperature of 160°F (71°C).
  5. While baking, whisk together mayonnaise, Sriracha, lime juice, and salt in a small bowl.
  6. Serve meatballs warm with the spicy mayo dip.
