  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, followed by green food coloring until desired color is achieved.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until just combined.
  5. Fold in mint chocolate chips gently.
  6. Scoop rounded tablespoons of dough onto prepared sheets about two inches apart.
  7. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool before serving.
