  • 8 oz pasta (penne or spaghetti)
  • 1 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated fresh Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • 2 tbsp olive oil

Instructions

  1. 1. Boil salted water in a large pot and cook pasta until al dente following package instructions. Drain and reserve some pasta water.
  2. 2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
  3. 3. Stir in sun-dried tomatoes and cook for 2 minutes until softened.
  4. 4. Pour in heavy cream and let simmer for about 5 minutes until slightly thickened.
  5. 5. Add cooked pasta to the sauce along with Parmesan cheese, mixing until well coated.
  6. 6. Garnish with chopped basil and additional Parmesan as desired. Serve warm.
