  • 1 cup shredded Monterey Jack cheese

  • 2 tbsp lime juice (about 1 lime)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of chicken breasts with salt, pepper, cumin, and chili powder.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken for about 5 minutes until golden brown.
  4. Pour salsa generously over the chicken and sprinkle cheese on top.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let rest for 5 minutes before garnishing with cilantro and lime juice. Serve with rice or tortillas.
