  • 1 cup mandarin oranges (canned or fresh)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup slivered almonds (toasted)
  • 1/4 cup feta cheese (crumbled)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse the baby spinach under cool water and pat dry with paper towels.
  2. Thinly slice the red onion.
