  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup salsa (your favorite brand)
  • 2 cups shredded cheese (mix of cheddar and Monterey Jack)
  • 2 cups tortilla chips
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Chop chicken breasts into bite-sized pieces.
  3. In a large skillet over medium heat, heat olive oil. Add the chopped chicken and cook until golden brown and cooked through for about 6–8 minutes.
  4. Stir in black beans, corn, salsa, cumin, and chili powder; cook for an additional 2–3 minutes.
  5. In a baking dish, layer half of the tortilla chips at the bottom. Add half of the chicken mixture followed by a sprinkle of shredded cheese.
  6. Repeat layers with remaining tortilla chips, chicken mixture, and top with remaining cheese.
  7. Bake for 20–25 minutes until bubbly and golden.
  8. Let cool for 5 minutes before serving with optional toppings like avocado or sour cream.
