  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 3 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers, diced (any variety)
  • 1/2 tsp saffron or 1 tsp turmeric
  • 1 cup frozen peas
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until golden brown.
  2. Season chicken thighs with salt and pepper, then add to the pot. Cook until browned on all sides (about 5-7 minutes).
  3. Stir in diced bell peppers, cumin, paprika, and saffron (or turmeric). Sauté for another 3-4 minutes.
  4. Add rice and chicken broth; stir well and bring to a gentle boil.
  5. Cover and reduce heat to low. Simmer for 20-25 minutes until rice absorbs liquid.
  6. In the last five minutes of cooking, stir in frozen peas for added freshness.
