  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 medium onion, diced
  • 1 bell pepper (red or green), diced
  • 2 tbsp homemade taco seasoning
  • 4 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper; sauté for about 5 minutes until soft.
  2. Add ground beef, breaking it apart with a spatula; cook until browned, approximately 6 minutes.
  3. Stir in taco seasoning, kidney beans, and black beans; cook for another 2 minutes.
  4. Pour in canned tomatoes and chicken broth; bring to a gentle boil while stirring occasionally for about 5 minutes.
  5. Reduce heat to low and let it simmer uncovered for 20-30 minutes.
  6. Serve hot, topped with shredded cheese and cilantro.
