  • 4 large bell peppers (red or yellow)
  • 1 lb lean ground beef
  • 2 cups cooked rice
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté chopped onion in oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add ground beef to the skillet; cook until browned (7-10 minutes).
  4. Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper. Mix well and let flavors meld for about 5 minutes.
  5. Stuff each pepper generously with the beef-rice mixture and place upright in a baking dish.
  6. Top with shredded cheese, cover with foil, and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly.
