  • 4 ripe tomatoes, diced
  • 2 bell peppers, chopped (any color)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 large eggs
  • ¼ cup fresh parsley or cilantro, chopped
  • Crumbled feta cheese (optional)

Instructions

  1. Heat 2 tbsp olive oil in a large skillet over medium heat. Sauté onions and bell peppers until soft (about 5 minutes).
  2. Add minced garlic, cumin, and paprika; cook for another 30 seconds until fragrant.
  3. Stir in diced tomatoes, salt, and pepper. Simmer on low heat for 10-15 minutes until the sauce thickens.
  4. Make wells in the sauce and crack eggs into them. Cover the skillet and poach eggs until whites are set but yolks remain runny (about 5 minutes).
  5. Finish with parsley or cilantro and crumbled feta if desired. Serve hot with crusty bread.
