Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 3 tbsp capers
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup chicken broth
  • 4 tbsp butter
  • 8 oz spaghetti or fettuccine
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Prep your ingredients by chopping the garlic and squeezing lemons for juice.
  2. Cook pasta in salted boiling water until al dente (8–10 minutes). Drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper; cook until golden brown on both sides (5–7 minutes per side). Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant (30 seconds), then add capers, lemon juice, chicken broth, and butter. Stir well.
  5. Return chicken to the skillet; simmer for 5 minutes, allowing flavors to meld.
  6. Toss cooked pasta into the skillet with chicken and sauce until well combined.
  7. Serve warm, garnished with parsley.
